Easy Make-Ahead Egg Bites: A Busy Mom's Breakfast Solution

As a mom of two, I know how chaotic mornings can be. Between getting everyone dressed, packing bags, and rushing out the door, breakfast can easily become an afterthought. That's why I am so excited to share my go-to recipe for easy, protein-packed egg bites - a lifesaver in our house! They are quick to make, easy to store and reheat in just 30 seconds. Plus, they are totally customizable to suit your family's favorite flavors. 

I found a recipe for egg bites a couple months ago that was amazing - this month I found some silicone muffin pans to make them in that have been a GAME CHANGER. The egg bites stuck in my traditional muffin pans and made them difficult to clean! I found some silicone muffins molds at Costco and I will share the Amazon link to the same pans - just in case you prefer next day delivery ;)

  • Silicone Muffin Mold Magic: I recently discovered an amazing silicone muffin mold from Costco (also available on Amazon) that makes egg bites foolproof. The eggs slide right out, no sticking and they are easy to clean after! These ones have reinforced edges so they don't flop or fold while you are taking them in and out of the oven! 
  • Makes Plenty: the recipe below makes 24 because we go through them FAST!

Ingredients (Makes 24 Egg Bites)

  • 24 eggs
  • 1 cup cottage cheese
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite!)
  • 1 cup diced deli turkey (or bacon, sausage, or veggie mix-ins)
  • Salt & pepper to taste
  • Olive oil or avocado oil (for greasing the molds)

Instructions:

  1. Preheat: Preheat your oven to 350°F (175°C).
  2. Mix Ingredients: In a large bowl, combine eggs, cottage cheese, shredded cheese, deli meat, salt, and pepper. Whisk or use a hand mixer to blend. Option to blend with Vitamix as well.
  3. Prep the Mold: Lightly grease your silicone muffin mold with olive or avocado oil.
  4. Fill the Cups: Pour the egg mixture evenly into each cup, filling about 3/4 full.
  5. Bake: Bake for 30 minutes, or until the tops are set and lightly golden.
  6. Cool & Store: Let them cool for a few minutes before removing them from the molds. Store in an airtight container in the fridge for up to a week.

Serving Tip:

Reheat egg bites in the microwave for 30 seconds, and breakfast is served!
